Spicy Crunchy Tuna Rice Bowl Donburi

Ingredients
  • 1 cup brown rice
  • 2 tablespoons sushi vinegar
  • 8 ounces sashimi-grade tuna, diced into small cubes
  • 1 tablespoon sriracha sauce (adjust to your spice preference)
  • 2 tablespoons Kewpie mayo
  • 1 tablespoon gochujang (Korean red pepper paste)
  • 1 teaspoon sesame oil
  • 1/4 cup tempura flakes
  • 2 green cucumbers, finely chopped
  • 1 ripe avocado, sliced
  • Sesame seeds (optional), for garnish
Directions
  1. Cook the brown rice according to the package instructions. Once cooked, transfer it to a large bowl and let it cool slightly. Add sushi vinegar to the rice and gently mix it until well combined. Set aside.
  2. In a small bowl, combine the sriracha sauce, Kewpie mayo, gochujang, and sesame oil. Mix well to create the spicy sauce.
  3. In a separate bowl, add the diced tuna, cucumbers, and pour the spicy sauce over it. Gently toss the tuna until it is evenly coated with the sauce. Set aside for a few minutes to allow the flavors to meld together.
  4. To assemble the donburi, divide the seasoned rice among serving bowls.  Sprinkle some tempura flakes over the seasoned rice. Top the rice with the spicy tuna mixture.
  5. Garnish the donburi with chopped sliced avocado, and sesame seeds (if desired).
  6. Serve the Spicy Crunchy Tuna Donburi immediately and enjoy!
